Oatmeal Breakfast Cookies (No Added Sugar, Dairy-Free, Gluten-Free)

oatmeal breakfast cookies

The original recipe simply calls for:

– 2 bananas
– 1 cup oatmeal (certified gluten-free, if necessary)
– 1/4 cup chocolate chips (dairy-free variety, if necessary)

Mix mashed bananas with oatmeal and chocolate chips, drop batter by tablespoon-full onto sprayed cookie sheet, bake at 350 for 12-15 minutes.

I changed it up a little bit to be a bit more “cookie-like” by blending the oatmeal in the blender first to make oat flour, then after I added the mashed bananas, I added an additional:

1 tsp baking soda
2 tsp baking powder
2/3 tsp cinnamon
1 tsp real vanilla
1/4 tsp sea salt

Instead of mixing chocolate chips into the batter, I just topped each raw cookie with three 60% cocoa dark chocolate nibs. Baked at 350 for about 13-15 minutes.
